100 gms of Little millet has 9.7 gm of Protein 7.6 gm of Fibre 60.9 gm of carbohydrate
Ingredients:
Little Millet(Saamai arisi) or Poor man's horse millet(Kudhirai Vaali) or Millet( thenai) - 1 cup
Water - 4 cups
Green chilly- Finely chopped 1 table spoon
Curd - 1 cup
Salt - As required
Seasoning:
Sesame oil - 3 teaspoons
Mustard seeds - 1 teaspoon
Uradh dhal - 2 teaspoons
Jeera - 1/2 teaspoon
Asafoetida- 1/4 teaspoons
Curry leaves - 10 leaves
Method:
1. Little millet is available in super markets are clean so we need not check for stones or dust. Soak the millet for 1/2 hr
2. Wash millet and put it in the cooker directly and add 4 cups of water cook it like how we normally cook the rice.
3.Once the millet is cooked smash it really well with the smasher then add the salt and curd and mix them well.
4. Now in a kadai add the oil when it gets hot add the mustards as it splatters add the uradh jeera and asafoetida when uradh turns brown add the curry leaves and pour this seasoning into the curd rice now add the chopped green chilly and mix them well.
Pickle is the best choice with little millet curd rice.
This same procedure to cook millet , poor man's horse tail millet , fox tail millet
